My husband just got back in town after being gone for a week on a mission trip. We (my two-year old and I) decided to have some yummy cookies ready to greet him when he got home.
We made these; a real food version of the No Bake Chocolate Oatmeal Cookie. Sweetened with maple syrup, these yummy cookies have a secret ingredient…gelatin! Gelatin is good for your hair and nails, it’s great for your skin and digestive system, and it contains protein. I seriously view it as a super food and try to slip it into as many things as I can for my family. Besides the health benefits, the gelatin also helps the cookie hold together. I recommend this gelatin.
No Bake Chocolate Cookies…with Gelatin

- 1/4 cup grass-fed butter
- 1/4 - 1/2 cup maple syrup
- 1/4 cup whole milk
- 2 tablespoons cocoa or carob powder
- 1 1/2 teaspoon unflavored gelatin
- 1/4 cup unsalted peanut butter ((or almond butter))
- 1 teaspoon vanilla
- 1/8 teaspoon unrefined sea salt
- 1 1/4 cup oats
|Add the first five ingredients in a sauce pan and bring to a boil over medium heat, stirring constantly. Once it’s boiling, remove from heat.|
|Stir in the peanut butter until it is melted into the liquid.|
|Stir in vanilla and sea salt.|
|Add the oats and mix until evenly coated in the chocolate mixture.|
|Drop by spoonful onto a sheet of wax paper and let cool. (You can stick them in the freezer to speed up the cooling process if you want.)|
