Oh my heavens this recipe is near and dear to my heart. It was given to me by my grandma who used to make this every Christmas when our whole extended family would bombard their house. We would eat and laugh and play games and my grandmother would cook. Boy does she cook! This is good ol’ nourishing, real comfort food right here folks.
We still get together every Christmas and my grandmother still cooks for the small army we call family, but this recipe has now become a staple in my own household as well. There is love in every bite, for real, and every time I see my little boys gobbling it up, it reminds me of those moments in the kitchen with my grandma.
The secret to this recipe is the sour cream and cottage cheese. It adds a great depth of flavor! I hope you enjoy it as much as we do. 🙂
Not Your Ordinary Mac ‘n Cheese
|Prep time||15 minutes|
|Cook time||45 minutes|
|Total time||1 hour|
- 8oz brown rice noodles ((regular macaroni noodles work as well))
- 2 cups cottage cheese
- 1 cup sour cream
- 1 pastured egg
- 3/4 teaspoons unrefined sea salt
- 2 cups shredded sharp cheddar cheese ((grass-fed is best))
- 1/2 cup raw whole milk
- dash pepper
|Preheat the oven to 350 degrees. Cook the noodles according to package directions; drain and set aside|
|In a medium sized bowl, combine the cottage cheese, sour cream, egg, salt, pepper, shredded cheese and milk.|
|Add the noodles to the mixture and stir well.|
|Pour into a lightly greased 2-quart casserole dish. Sprinkle the top with paprika.|
|Bake at 350 for 45 minutes.|
