Once upon a time I applied to Wonder Mill’s blogger challenge program. What’s that you ask? Oh, only a challenge Wonder Mill does where they send a FREE grain mill to approved bloggers in exchange for three recipes. I nearly fell off the couch when I received an email saying I had been accepted. Sure enough, several weeks later a grain mill appeared at my doorstep. Ever since then I have been milling anything and everything that can be milled.
Now if you didn’t have a grain mill show up at your door step and there’s no room in the budget to get one, you can mill the oat and rice flours in this recipe in your blender. Just throw them in there and blend away. I’m not sure if you will get the fine, bread flour consistency, but hey, it’s better than nothing! You can also buy oat flour and rice flour (affiliate links) online.
I also must say that I think this gluten-free blend is lighter and tastier than your typical wheat flour pancake.
